Keto Chocolate Pudding

Once you're deep into ketosis you probably won't have chocolate cravings but if you do this is sure to satisfy! If you don't tolerate dairy the heavy cream adds in some additional thickness. If you aren't able to tolerate dairy simply leave it out and blend a bit longer.

Ingredients

  • 3 avocados
  • splash of heavy cream (if you are able to tolerate dairy otherwise omit) 
  • 1/2 cup unsweetened coconut milk
  • 4 tbsp cacao
  • 1 tsp stevia
  • 2 tsp vanilla extract
  • 1/8 strawberry

Directions

  1. Cut avocados in half and remove pits
  2. Place the avocado, heavy cream, coconut milk, cacao, stevia, vanilla, and strawberry in a food processor and blend
  3. Divide into desert dishes
  4. Top with keto whipped cream 
  5. Garnish with 1/4 strawberry chopped into pieces, cacao nibs, and a full strawberry 

A thick chocolate pudding in under 1o minutes filled with healthy fats. This is the best keto chocolate pudding recipe because there are no added sugars and it’s ridiculously sweet and bold. I’ve tried making this a couple of ways and I’ve found the secret is to add that small amount of strawberry blended into the pudding to get that natural sweetness. 

The other secret for adding sweetness is the stevia. I really like the liquid kind, I find it a lot easier to manage and blend. Not to mention stevia has been shown to be a biofilm buster and beneficial to those battling lyme disease.

A couple of other variations to play with would be to add in cocoa powder instead of cacao. To add in a small amount of espresso to enhance the chocolate flavor. And to switch out the strawberry for a small amount of raspberry.
